Prosciutto Quiche

Last weekend we were invited to do the "catering" for the 60th birthday of  our sister in law's father. We did some sweet and spicy  snacks. So we adjourned into our kitchen for 2 days and started ..! Our deadline was 4pm last Saturday at their house. The outer temperatures were "perfectly" ... 36°C!!! And sometimes we found ourselves dreaming of relaxing at the Rhine river together with some friends ;-)

Instead of that we closed all windows and thought that this would be the best idea to keep out the heat but after starting the oven for almost the whole day it felt like having 46°C inside ..!


However, we are glad that the summer did arrive ... so let's talk about one of the snacks we did prepare for  the 40 guests of Karo's dad.

Last year we already baked a quiche with prosciutto for one of our blogger friends and her guests were so excited that we decided to bake it once again ...


Prepare for a 26 cm quiche-form:

For the batter:

150 g cold butter cut in slices
260 g all purpose flour
1 tsp salt
4 tbsp ice cold water

For the filling:

200 g creme
170 ml milk
4 eggs
1/2 tsp salt
1,5 tbsp cornstarch (whisked with some creme)
150 g grated cheese
3-4 slices prosciutto

  • add all ingredients for the batter to a bowl and mix with a pastry cutter (or carefully by hand)
  • wrap it with foil and let it rest for half an hour in the fridge
  • with an egg whip whisk all ingredients in a bowl (except cheese and prosciutto)
  • stir under 50 g of the cheese and put to the side / preheat the oven to 200°C
  • roll out the dough and put into the greased form and remove the offcut
  • with a fork prick the dough sometimes  and bake for 6 minutes
  • take out of the oven and add some of the cream mixture, than dispose the prosciutto
  • spread the remaining cream and add the 100 g of cheese
  • bake for further 30 minutes until golden
  • even if the cream seems to be a little liquid, let cool down the quiche and rest for minimum 3 hours in the fridge before serving


A cold glass of dry white or red wine fits perfectly to our quiche on warm summer evenings and so we did it on the birthday of Andreas.

It's also just perfect to place at a nice buffet with other little treats. We also made our Crêpes-Rolls and a foie pie. To make it perfect we also baked two kind of bread so the guest can have a little something to start with. We'll show you the recipes for the breads in the near future ;-).
