For his birthday, Nico, a colleague of Torsten always bakes a really delicious sheet cake. Because of that we had the idea to try the dough of his recipe to bake some sweet cupcakes of it. Kokos-Himbeer Cupcakes_Backen_Rezept

For 30 mini cupcakes you should prepare:

4 cups all purpose flour

2 cups sugar 

2 cups buttermilk

3 eggs

4 tbsp rapeseed oil

23 g baking powder

1 cup desiccated coconut 

and for the topping:

130 g smooth butter

260 g icing sugar 

1 tsp vanilla extract

desiccated coconut

fresh raspberries

  • preheat the oven to 160°C
  • mix all ingredients for the batter in a bowl until smooth
  • fill the batter into paper liners (in your muffin pan)
  • bake for around 15 minutes
  • cool down on a cake grid
  • meanwhile prepare the topping - beat the butter and vanilla extract until fluffy
  • still beating, add the icing sugar and combine to a smooth topping
  • fill into a pastry bag and spread on the top of the muffins
  • dip into the rasps of coconut and decorate with a raspberry
